Crispy Breaded Wild Atlantic Prawns with Harissa Mayo

Ingredients
4 tbsp plain flour
1 tbsp corn flour
2 large eggs, beaten
1 lemon zest
1 pinch chilli flakes
50g panko breadcrumbs
1 pack SuperValu Signature Tastes Wild Atlantic Prawns
4 tbsp mayonnaise
1 tbsp SuperValu Signature Tastes Harissa Marinade Sauce
4 tbsp sunflower oil
Salt
Pepper
Directions

1. Preheat the air fryer or oven to 200ËšC.

2. In a bowl, combine the flour and corn flour with some salt and pepper. 

3. In a second bowl, combine the breadcrumbs with lemon zest and chilli flakes. 

4. Crack the eggs with a tbsp of water in a third bowl and beat well until light and frothy. 

5. Dip the prawns in the flour mix, then in the beaten eggs, then in the breadcrumb mixture, tossing to coat the prawns well in the crumbs. 

6. Transfer the prawns to the basket of the air fryer and cook for 8-10 minutes, until the prawns are golden and cooked through. 

7. Remove the prawns from the air fryer and enjoy immediately with the harissa sauce dip.

8. To Oven Cook: Drizzle some sunflower oil on a baking tray, and add a drizzle over the prepared prawns. Roast for 6-8 minutes until coloured and cooked through. 

9. In a small bowl, combine the mayonnaise and harissa sauce until smooth. 

10. Serve prawns with harissa dip and enjoy
